Chicken ginger

Ingredients

3″ piece of fresh ginger
1-1/2lbs boneless chicken breasts-cut into 11/2″ cubes
2Tbs. canola oil
1 large onion-thinly sliced
2 garlic cloves -minced
1/4c soy sauce
2Tbs. white vinegar
2Tbs. sugar
1/2c scallions-sliced

Procedure

  • Peel ginger and cut into 1/8″-thick matchsticks to measure 1/2 cup.
  • Soak in cold water 10 mins.
  • Drain heat oil in skillet over high heat,brown in 2 batches,6-8 mins.
  • Set aside.
  • In same skillet over medium heat ,cook ginger,onion and garlic,stirring until browned,8-10 mins.
  • Add soy sauce,white vinegar and sugar,cook over high heat until thick,3-4 mins.
  • Add chicken,stir to warm.
  • Remove from heat.
  • Serve it
